Low Carb Mint Chocolate Chip Ice Cream Recipe

Ingredients:

  • 1 1/2 cup heavy cream
  • 1 cup half ‘n half
  • 1/2 cup very cold water
  • 3/4 cup Splenda
  • 1/8 teaspoon salt
  • 1 teaspoon mint or peppermint extract
  • 1 teaspoon green food color (optional)
  • 1/4 cup sugar-free chocolate chips

Directions:

  1. Put first six ingredients in a bowl and use mixer until Splenda is well mixed and dissolved.
  2. Carefully (optional) mix in green food color.
  3. Pour into your rotating ice cream freezer and begin mixing.
    (Most ice cream makers take 30-40 minutes to freeze properly.)
  4. Five to seven minutes before completion, slowly pour chocolate chips into ice cream maker.

Low Carb Peanut Butter Cheesecake Recipe

Ingredients:

  • 1 (7 g) packet unflavored gelatin
  • 3/4 cup da vinci sugar-free vanilla syrup
  • 24 ounces cream cheese, softened
  • 1/2 cup natural-style peanut butter
  • 1 cup heavy cream, whipped

Directions:

  1. In a small pot, sprinkle the gelatin over 1/2 cup syrup and let soften 5 minutes.
  2. Heat and stir over low heat to dissolve the gelatin completely. Do not boil.
  3. Cool to room temperature.  (You can also dissolve the gelatin in the microwave by heating it about 30 seconds or so on HIGH. Stir until completely dissolved.).
  4. Beat the cream cheese and peanut butter until creamy.
  5. Gradually beat in the remaining 1/4 cup syrup and the gelatin mixture; beat until fluffy.
  6. Gently fold in the whipped cream.
  7. Pour into a greased 9-inch pie plate.
  8. Chill until set, about 5-6 hours.
  9. Garnish with whipped cream or whipped topping, if desired.

Ingredients:

  • 2 1/2 Tablespoons Wheat Gluten (5g)
  • 2 Tablespoons Heavy Whipping Cream (0.8g)
  • 1 Tablespoon Water
  • 1Tablespoon Oil
  • 1/2 Teaspoon Baking Power (0.35g)
  • 2 Eggs (1.2g)
  • 1 packet of Splenda
  • Few shakes of Cinnamon if desired
  • Dash of vanilla

Directions:

  1. Mix everything up in a bowl with a whisk, and fry like regular pancakes. If it’s a little runny, just add a tiny bit more of the gluten, or if too thick, a little more water.
  2. Will make 3 nice size pancakes.

Here is a recipe for low carbohydrate no bake cookies that has received a lot of positive feedback.

Low Carb No Bake Cookies Recipe

Ingredients:

  • 1 tablespoon butter
  • 3 tablespoons heavy cream
  • 2 teaspoons cocoa
  • 1 teaspoon liquid Splenda (equal to 2/3 cup sugar or splenda)
  • 1 tablespoon natural peanut butter
  • 2 tablespoons oats
  • 1/4 cup unsweetened coconut (or use 1/2 cup and omit almond flour)
  • 1/4 cup almond flour, 1 ounce
  • 1/4 teaspoon vanilla

Directions:

  1. Bring the butter, Splenda, cream and cocoa to a boil in a very small pot.
  2. Boil one minute, stirring constantly.
  3. Stir in the peanut butter until well blended, then stir in the remaining ingredients.
  4. Drop onto wax paper.
  5. Mixture will be crumbly, so you may need to shape them with your fingers.
  6. Chill or freeze until firm.
  7. Makes 12 (very small) bite-sized cookies. (Can be frozen)

Low Carb Recipe: Delicious Cheesecake

Here is a incredible cheesecake recipe that is also low carb.

Ingredients:

  • 5 packages (8 oz )cream cheese
  • 5 large eggs
  • 18 packets AS (I used splenda 3/4 cup)
  • 1 1/2 tsp. vanilla extract
  • 1/2 cup heavy cream

Directions:

  1. Preheat oven to 350.
  2. Spray a spring-form pan with a non-stick spray.
  3. In a large bowl mix eggs, cream, sweetener, and extract.
  4. Add cream cheese in 2-oz chunks for easier beating.
  5. After all the lumps are gone pour into the pan and bake for 50 to 60 minutes.
  6. Leave in the fridge overnight.

Low Carb Recipe: Greek Chicken

Ingredients:

  • 1 pound boneless chicken
  • 1/2 cup crumbled feta cheese (3 grams of carbs)
  • 1/2 tsp dried oregano (0.5 grams of carbs)
  • 1 tbsp lemon juice (1.3 grams of carbs)
  • 1 tbsp oil
  • 1 cup chicken broth
  • 1/2 cup tomato diced (5.8 grams of carbs)
  • 1 cup fresh spinach (2.4 grams of carbs)
  • Add salt and pepper to taste

Baking Instructions:

  1. Flatten chicken.
  2. Combine feta, lemon juice and oregano. Spread over chicken.
  3. Fold chicken to enclose filling; secure with a toothpick.
  4. Heat oil in a skillet until hot.
  5. Add chicken and cook until golden brown.
  6. Mix chicken broth, tomato and spinach.
  7. Add to skillet, heat to boiling.
  8. Reduce heat to low; cover and simmer 8-10 minutes.
