<h3><strong>Dairy Free Cheesy Garlic Bread Recipe</strong></h3>
<p><em>Ingredients:</em></p>
<ul>
<li>2 c Water or Almond Milk</li>
<li>1/4 c Nutritional yeast flakes</li>
<li>1/3 c quick grits or cream of rice</li>
<li>1/4 c tahini</li>
<li>1-2 cloves garlic, crushed</li>
<li>2 ts salt</li>
<li>3 drops yellow food coloring</li>
<li>4 tb Better Batter Gluten Free Flour</li>
<li>3 tb Fresh lemon juice</li>
<li>1 tb chopped green onion</li>
</ul>
<p><em>Directions:</em></p>
<ol>
<li>Preheat your oven to 450 degrees.</li>
<li>Slice the bread in half-lengthwise and set aside, cut side up.</li>
<li>In the bowl of your blender or food processor, blend the Non Dairy Cheese Sauce Ingredients until smooth.</li>
<li>Heat in a small saucepan until thickened.</li>
<li>Divide in half.</li>
<li>Spread each half of bread with half of the butter mixture.</li>
<li>Bake for 10-15 minutes.</li>

<li>Gently stir in the blueberries.</li>
<li>In a separate bowl, mix together the mashed banana, soy milk (or buttermilk), egg, oil and vanilla.</li>
<li>Pour the wet ingredients into the dry, and mix just until blended.</li>
<li>Spoon into muffin cups, filling all the way to the top.</li>
<li>Bake for 15 to 18 minutes in the preheated oven, or until the tops of the muffins spring back when lightly touched.</li>

<h3><strong>Dairy Free Waffles Recipe</strong></h3>
<p><em>Waffle Ingredients:</em></p>

<li>1 T. and 1 t. baking powder</li>
<li>2 T. white sugar</li>

<li>1 T. unsweetened plain soy yogurt</li>
</ul>
<p><em>Waffle Directions:</em></p>
<ol>
<li>Preheat a waffle iron.</li>
<li>In a medium-sized mixing bowl, sift together the flour, baking powder, sugar, cinnamon and salt.</li>
<li>In another bowl, whisk together the eggs with the almond milk, melted soy margarine and soy yogurt until well combined.</li>
<li>Whisk the wet ingredients into the dry, mixing until just combined.</li>
<li>Using about 1/3 cup batter at a time, ladle the batter into the preheated waffle iron, pushing the batter to the edges of the iron.</li>
<li>Cook until golden brown, about 4-5 minutes, or until the iron is no longer steaming.</li>
<li>Serve warm with your choice of toppings (I like fruit and a bit of honey).</li>

<li>When cooked, remove the cake from the oven and allow the cake to cool in the tin for 5-10 minutes before turning out to cool.</li>

			<content:encoded><![CDATA[<p>Here is an interesting recipe for buttermilk cake with berries that is advertised as being gluten free, dairy free, egg free, soy free, and of course Vegan!</p>
<h3><strong>Gluten Free/Dairy Free and Vegan Buttermilk Cake with Berries Recipe</strong></h3>
<p><em>Ingredients:</em></p>
<ul>
<li>3/4 c. hemp milk mixed with 1/4 c. apple cider vinegar (Hemp milk is richer and thicker than most milk replacers.)</li>
<li>2 teaspoons flax meal dissolved in 2 T club soda and 1 t olive oil (replacer for 2 eggs)</li>
<li>2 1/2 c. gluten-free flour mix (I used 1 c. white rice flour, 3/4 c. teff, 1/2 c. tapioca starch, and 1/4 c. cornmeal)</li>
<li>1 tablespoon baking powder</li>
<li>1/2 cup dark brown sugar (demerara)</li>
<li>1/2 teaspoon salt</li>
<li>1/4 cup unrefined coconut oil</li>
<li>zest of 2 lemons</li>
<li>1 cup of raspberries (or more—yes, please!)</li>
<li>3 tablespoons raw sugar</li>
<li>1 teaspoon large grain salt</li>
</ul>
<p><em>Directions:</em></p>
<ol>
<li>Preheat oven to 400F degrees, racks in the middle.</li>
<li>Grease and flour (or line bottom with parchment paper) one 11-inch tart/quiche pan.</li>
<li>Prepare the ‘buttermilk’ by mixing the hemp milk and vinegar in a bowl or measuring cup.  Allow it to sit for about 10 minutes.</li>
<li>In a small bowl or ramekin, prepare the flax gel, and allow it to sit for 3-4 minutes.</li>
<li>Using the microwave or the stove top, heat the coconut oil until it has melted, and allow it to cool a bit.</li>
<li>Combine the flours, baking powder, and sugar and salt in a large bowl.</li>
<li>In a separate, smaller bowl whisk together the flax gel and the buttermilk, whisk in the melted coconut oil, and the lemon zest.</li>
<li>Pour the buttermilk mixture over the flour mixture and stir until just combined &#8211; try not to over mix.</li>
<li>Spoon the batter into the prepared pan, pushing out toward the edges.</li>
<li>Drop the berries across top.</li>
<li>Sprinkle with the sugar and then the salt.</li>
<li>Bake for about 23-27 minutes or until cake is set (or a toothpick in the center comes out clean), and a touch golden on top.</li>
<li>We preferred the texture of this once it had cooled nearly all the way.</li>
<li>With raspberries getting moldy so easily, I would suggest storing the cooled cake, covered, in the refrigerator unless it will be entirely consumed the first or second day.</li>

<h3><strong>Dairy Free Vanilla Ice Cream Recipe</strong></h3>
<p><em>Ingredients:</em></p>
<ul>
<li>2 cups dairy alternative, divided</li>
<li>2 cups safe marshmallows</li>
<li>1/3 cup sugar</li>
<li>3 tbsp oil</li>
<li>1 tsp safe vanilla extract</li>
<li>1 package gelatin</li>
</ul>
<p><em>Directions:</em></p>
<ol>
<li>In a medium saucepan combine marshmallows, sugar and one cup of dairy alternative.</li>
<li>Stirring constantly bring marshmallow mixture to a slow boil until sugar and marshmallows have dissolved.</li>
<li>Remove from heat and allow to cool.</li>
<li>Meanwhile combine gelatin, one cup of dairy alternative and oil, allow to stand for five minutes.</li>
<li>Using a stand or hand mixer (I use a whisk) beat gelatin, oil and dairy alternative mixture until foamy.</li>
<li>Add vanilla.</li>
<li>Combine all ingredients together and transfer to the frozen canister of an ice cream maker.</li>
<li>Process according to manufacturer’s instructions.</li>

			<content:encoded><![CDATA[<p>Apparently it is crepes day here at Recipe Bay!   I just noticed another incredible dairy free crepes recipe that I figured i would share.  This time it is banana crepes!</p>
<h3><strong>Dairy Free Banana Crepes Recipe</strong></h3>
<p><em>Ingredients:</em></p>
<ul>
<li>¼ cup dairy-free soy margarine, preferably a “stick” variety</li>
<li>2/3 cup packed dark brown sugar</li>
<li>½ t. ground cinnamon</li>
<li>¼ t. nutmeg</li>
<li>1 T. banana liqueur (optional)</li>
<li>1 t. vanilla extract</li>
<li>4 bananas, peeled and sliced in half lengthwise and then again widthwise</li>
<li>½ cup dark rum</li>
<li>¼ cup raw walnuts</li>
<li>1/4 Recipe Basic Dairy-Free Crepes</li>
<li>Dairy-free vanilla ice cream, either store-bought or homemade</li>
</ul>
<p><em>Directions:</em></p>
<ol>
<li>In a large, heavy-bottomed skillet over low heat, melt the dairy-free soy margarine.</li>
<li>Using a wooden spoon, stir in the brown sugar, cinnamon and nutmeg, mixing well until the sugar is dissolved.</li>
<li>Stir in the banana liqueur and vanilla extract, bring the sauce to a simmer, and add the bananas.</li>
<li>Cook for 2-3 minutes, carefully flipping the bananas to ensure even cooking.</li>
<li>Transfer the bananas to small casserole dish and set aside.</li>
<li>2. With the sauce at a simmer, carefully stir in the rum and very carefully ignite the sauce.</li>
<li>Cook for 1-2 minutes more, or until the flame completely dies out.</li>
<li>Continue cooking until the mixture is the consistency of a thick syrup.</li>
<li>3. Add the sauce and walnuts to the bananas.</li>
<li>Portion the banana mixture into the dairy-free crepes, serving with extra sauce, walnuts and dairy-free vanilla ice cream.</li>

			<content:encoded><![CDATA[<p>Crepes are truthfully one of my favorite meals.  It is like a breakfast, but it commonly eaten for lunch or even dinner.  If you are living dairy free, here is a crepes recipe for you!</p>
<h3><strong>Dairy Free Apple Brandy Crepes Recipe</strong></h3>
<p><em>Ingredients:</em></p>
<ul>
<li>¾ cups white flour</li>
<li>¼ cup whole wheat pastry flour</li>
<li>1/8 t. salt</li>
<li>1 T. sugar</li>
<li>2 large eggs</li>
<li>1 cup plus 2 T. plain unsweetened soymilk</li>
<li>6-8 large apples (about 4½ lbs), peeled and chopped</li>
<li>2 T. soy margarine</li>
<li>½ cup brown sugar</li>
<li>¼ cup. lemon juice</li>
<li>1 t. cinnamon</li>
<li>¼ cup brandy</li>
</ul>
<p><em>Directions:</em></p>
<ol>
<li>Make the crepe batter.</li>
<li>In a medium bowl, combine the flours, salt and sugar.</li>
<li>Whisk in the eggs and 1/3 cup of the soymilk, mixing until there are no lumps in the batter.</li>
<li>Whisk the soymilk into the batter, 1/3 cup at a time, until the batter resembles a thick cream.</li>
<li>Let the batter rest for 1 hour in the refrigerator.</li>
<li>Meanwhile, make the filling. In a small saucepan over medium-low heat, combine the apples, soy margarine ,brown sugar, lemon juice, and cinnamon.</li>
<li>Cook until the apples are slightly tender and the sugar has melted to a syrup, about 10 minutes, stirring occasionally.</li>
<li>Add the brandy, and ignite with a match, tossing the apples in the pan for several seconds until the flames subside.</li>
<li>Remove mixture from heat and set aside.</li>
<li>Heat a small to medium sauté or frying pan over medium heat.</li>
<li>Once hot, brush a small amount of oil or dairy-free soy margarine on the surface of the pan.</li>
<li>Using a ¼ cup scoop or small ladle, add about 3 T. of batter to the pan, rotating the pan to distribute the batter evenly over the pan.</li>
<li>Cook the crepe for about 2 minutes on the first side, or until the edges begin to brown slightly.</li>
<li>Using a spatula or your fingers, flip the crepe and cook on the opposite side for 1 minute more.</li>
<li>Transfer the crepe to a plate and cover loosely with a paper towel to keep warm while you make the rest of the crepes.</li>
<li>Using a ladle, portion the apple filling equally into the crepes, spooning a bit of the sauce over top of the crepes to serve.</li>
<li>Serve immediately.</li>

<li>Combine oat flour, barley flour, amaranth flour, baking soda, and salt, and set aside.</li>
<li>Using an electric mixer set on medium, combine canola oil, and honey.</li>
<li>Add bananas, lemon juice, and nutmeg. Once thoroughly mixed, add flax seed meal, then raisins.</li>
<li>Add dry ingredients to wet, and mix until just combined.</li>
<li>Grease a loaf pan, sprinkle with a little flour, tapping out the extra.</li>
<li>Transfer batter to loaf pan.</li>
<li>Bake in center of oven 45 minutes, rotating once halfway through until golden brown on top.</li>
<li>Let cool in pan about 5 minutes, before transferring to a cooling rack.</li>
<li>Let rest at least half an hour before slicing.</li>
</ol>
