One of my favorite foods has always been banana bread. I remember my grandmother making it for me all the time when I was younger. When I noticed this recipe, I thought it would be a great idea to feature it here.
Sugar Free Banana Bread Recipe
Ingredients:
Fruit Filling
- 2 medium bananas, diced
- 2 medium apples, peeled and diced
- 1/2 cup sugar substitute, preferably splenda
- 1 tablespoon raisins
- 1 teaspoon cinnamon
- 1 tablespoon orange juice
- 1 teaspoon cornstarch
- 2 tablespoons water
Crumb Topping
- 1/2 cup oatmeal
- 1/4 cup flour
- 1/4 cup margarine
- 1 tablespoon chopped walnut
- 1 teaspoon cinnamon
- 2 tablespoons sugar substitute, preferably Splenda
Directions:
- Preheat over to 350 degrees.
- Combine filling ingedients except for bananas, cornstarch and water in a pot. Cook over medium heat for 5 to 8 minutes until apples are slightly soft. Then add sliced bananas.
- Dissolve cornstarch in water and then add to filling. Bring to a boil and then remove pot from the heat.
- Fully combine all ingredients for topping in a small bowl.
- Divide the filling between 4 greased ramekins or put it all into a greased baking dish. Sprinkle crumb topping over the filling.
- Bake for 20 minutes.
