Low Sodium Recipe: Carrot Cake Cookies

Here is an interesting recipe for carrot cake cookies.  It is also advertised as low sodium.

Ingredients:

  • 6 tablespoons butter or stick margarine
  • 3/4 cup packed brown sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon each baking soda, salt and ground cinnamon
  • 1 cup grated carrots
  • 1/2 cup each raisins and chopped pecans

Directions:

  1. In a mixing bowl, cream butter and sugar.
  2. Add egg and vanilla; mix well.
  3. Combine the flour, baking powder, baking soda, salt and cinnamon.
  4. Gradually add to creamed mixture until blended.
  5. Stir in carrots, raisins and pecans.
  6. Drop by rounded tablespoonfuls 2 in. apart on ungreased baking sheets.
  7. Bake at 325° for 12-15 minutes or until edges are lightly browned and cookies are set.
  8. Cool for 2 minutes before removing to wire racks.
