<h3><strong>Wheat Free Italian Cream Cake Recipe</strong></h3>
<p><em>Ingredients:</em></p>
<ul>
<li>5 Eggs</li>

<li>1 c Honey</li>
<li>1 tb Vanilla</li>
<li>1 c Chopped nuts (optional)</li>

<li>1 t Baking soda (heaping)</li>
<li>1 1/2 c AM Rice Flour</li>
<li>1/2 c AM Buckwheat Flour</li>

<p><em>Cake Directions:</em></p>
<ol>
<li>Separate the eggs.</li>
<li>Beat the whites until stiff, and set aside.</li>
<li>Beat the yolks, butter, oil, honey, vanilla, nuts and coconut together.</li>
<li>Measure the buttermilk into a quart measuring cup; stir in the soda and let set 30 seconds until foamy.</li>
<li>Mix the flours.</li>
<li>Alternately add the flours and the buttermilk to the butter mixture until thoroughly mixed.</li>
<li>Gently fold in the egg whites until barely mixed and still light.</li>
<li>Pour into a well oiled 9&#8243; x 13&#8243; cake pan.</li>
<li>Bake at 350 F. for 35 to 45 minutes until a toothpick inserted in the center comes out clean.</li>
<li>Let cool.</li>
<li>Spread cream cheese icing.</li>
</ol>
<p><em>Icing Directions:</em></p>
<ol>
<li>Soften two 8 oz. pkgs. of cream cheese.</li>
<li>Beat with 1/2 cup honey and 1/2 cup maple or other syrup and 3 tsp. vanilla.</li>
<li>If needed, add a little non instant dry milk powder or a little milk to reach the desired consistency.</li>

<p><em>Directions:</em></p>
<ol>
<li>Preheat oven to 350 degrees.</li>
<li>Combine oat flour, barley flour, amaranth flour, baking soda, and salt, and set aside.</li>
<li>Using an electric mixer set on medium, combine canola oil, and honey.</li>
<li>Add bananas, lemon juice, and nutmeg. Once thoroughly mixed, add flax seed meal, then raisins.</li>
<li>Add dry ingredients to wet, and mix until just combined.</li>
<li>Grease a loaf pan, sprinkle with a little flour, tapping out the extra.</li>
<li>Transfer batter to loaf pan.</li>
<li>Bake in center of oven 45 minutes, rotating once halfway through until golden brown on top.</li>
<li>Let cool in pan about 5 minutes, before transferring to a cooling rack.</li>
<li>Let rest at least half an hour before slicing.</li>

			<content:encoded><![CDATA[<p>Here is a wheat free cupcakes recipe that has received some good reviews, so I figured I would share it here.  If you decide to try this recipe, please leave a comment and let us know how it was!</p>
<p><em>Ingredients:</em></p>
<ul>
<li>4 ounces Valrhona 75% &#8211; 85% cacao (or any good quality dark chocolate)</li>
<li>1.5 sticks butter</li>
<li>1-1/8 cups sugar</li>
<li>4 eggs</li>
<li>1/2 cup + 2 tablespoons gluten-free flour (I used two different kinds of wheat free)</li>
<li>2 tablespoons cocoa powder, unsweetened</li>
<li>3/4 teaspoon baking powder</li>
<li>1/8 teaspoon salt</li>
<li>1/2 teaspoon xanthan gum</li>
</ul>
<p><em>Directions:</em></p>
<ol>
<li>Chop the chocolate and transfer into the bowl of a standing mixer.</li>
<li>Add the butter to the chocolate and place the bowl over a pan of simmering water. Stir until the chocolate melts and the butter is combined.</li>
<li>Remove from heat and stir in the sugar. Let the mixture cool for 10 minutes.</li>
<li>Measure out the gluten-free flour, 2 tablespoons cocoa, 3/4 teaspoon baking powder, 1/8 teaspoon salt, and the xanthan gum into a different small bowl.</li>
<li>Transfer the cooled chocolate/butter mixture to the electric mixer and beat for 3 minutes.</li>
<li>Add one egg at a time, mixing for 10 seconds between each.</li>
<li>Sift the gluten-free flour into one bowl and mix to combine.</li>
<li>Scoop into cupcake cups only 2/3s full. Bake all the cupcakes at 350 F for 25 minutes or until a toothpick comes out clean.</li>
</ol>
<p><em>Note:</em> If the oven is not hot enough than these cupcakes may over-flow. One way to be safe is to either fill 2/3’s full or another trick I use is to preheat to 375, then drop the heat to 350 once I put the cupcakes into.</p>

<p><em>Ingredients:</em></p>
<ul>
<li>1 cup stone-ground cornmeal (NOT polenta)</li>
<li>1/2 teaspoon salt</li>
<li>1/2 teaspoon baking soda</li>
<li>1 tablespoon lemon juice</li>
<li>1 cup soy milk (unsweetened)</li>
<li>1 and 1/2 teaspoons egg substitute + 2 tablespoons soy milk or equivalent egg substitute to = 1 egg</li>
<li>1 tablespoon margarine or shortening</li>
</ul>
<p><em>Directions:</em></p>
<ol>
<li>Heat oven to 450 degrees.</li>
<li>Place cast iron skillet (size determines thickness of vegan bread, I use a fajita type skillet and get an oval, thin cornbread. A 9 inch round could also work here) in heating oven to get hot.</li>
<li>Melt margarine or shortening in skillet while you prepare the rest of the ingredients.</li>
<li>Mix cornmeal, salt, and baking soda together.</li>
<li>Put lemon juice in 1 cup measuring cup and add soymilk to = 1 cup.</li>
<li>Add soured soymilk and egg replacer to cornmeal mixture, stir well.</li>
<li>Remove skillet from oven. (Careful not to spill the grease!)</li>
<li>Working quickly, pour batter into pan, and carefully return to oven. Skillet may be very full. This is OK it won&#8217;t rise much.</li>
<li>Bake 10-20 minutes depending on pan size, oven, and desired level of doneness.  Test with a fork if unsure.</li>
<li>When done, turn out onto serving platter immediately and serve warm!</li>

			<content:encoded><![CDATA[<p>Here is a nice recipe for french toast, which is not only dairy free and wheat free, but also very low in sugar.</p>
<h3><strong>Low Sugar, Dairy Free, Wheat Free French Toast Recipe</strong></h3>
<p><em>Ingredients:</em></p>
<ul>
<li>6 stale slices of wheat-free bread</li>
<li>2 eggs, beaten</li>
<li>1/4 cup vanilla almond milk (unsweetened)</li>
<li>1T ground cinnamon</li>
<li>1 t vanilla extract</li>
</ul>
<p><em>Directions:</em></p>
<ol>
<li>Leave bread out overnight.</li>
<li>Next morning beat eggs, almond milk, cinnamon and vanilla extract.</li>
<li>Soak each slice of bread in the mixture for 1-2 minutes and then turn over and soak for another minute.</li>
<li>Place on skillet on medium heat for 1 minute, flip over and cook for one more minute or until golden brown.</li>
<li>Top with Smart Balance Light butter and maple syrup.</li>

<li>Pour into the lined pan.</li>
