Low Sodium Recipe: Carrot Cake Cookies

Here is an interesting recipe for carrot cake cookies.  It is also advertised as low sodium.

Ingredients:

  • 6 tablespoons butter or stick margarine
  • 3/4 cup packed brown sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon each baking soda, salt and ground cinnamon
  • 1 cup grated carrots
  • 1/2 cup each raisins and chopped pecans

Directions:

  1. In a mixing bowl, cream butter and sugar.
  2. Add egg and vanilla; mix well.
  3. Combine the flour, baking powder, baking soda, salt and cinnamon.
  4. Gradually add to creamed mixture until blended.
  5. Stir in carrots, raisins and pecans.
  6. Drop by rounded tablespoonfuls 2 in. apart on ungreased baking sheets.
  7. Bake at 325° for 12-15 minutes or until edges are lightly browned and cookies are set.
  8. Cool for 2 minutes before removing to wire racks.

Low Sodium Recipe: White Flour Tortillas

Low Sodium White Flour Tortillas Recipe

Ingredients:

  • 2 c Flour
  • 1 t Sodium Free Baking Powder
  • 2 T Shortening
  • 1/2 c Warm Water

Directions:

  1. In mixing bowl, stir together flour and baking powder.
  2. Cut in shortening until mixed.
  3. Add 1/2 cup warm water and mix till dough can be gathered into a ball, adding more water if needed, one tablespoon at a time.
  4. Let dough rest fifteen minutes.
  5. Divide dough into twelve portions, and shape into balls.
  6. On a lightly floured surface, roll each ball to a seven inch round.
  7. Trim uneven edges to make a round tortilla.
  8. Cook in ungreased skillet griddle over medium heat (375 in an electric skillet) about 1 1/2 minutes per side or till lightly browned.

Low Sodium Herb and Cheese Mashed Potatoes Recipe

Ingredients:

  • 1 1/2 lb Potatoes
  • 4 oz Cream Cheese
  • 4 T Unsalted Butter
  • 1/4 c Milk
  • 1/4 t Garlic Powder
  • 1 T Dried Parsley
  • 1/2 t Thyme

Directions:

  1. Peel potatoes and slice thinly.
  2. Boil in water until soft, drain thoroughly.
  3. Mash with electric mixer until smooth. Stir in cheese and melted butter.
  4. Add milk and mix until smooth.
  5. Stir in herbs.
  6. Adjust the amount of milk to achieve the desired consistency.
