Low Fat Recipe: Citrus Berry Sherbet

Low Fat Citrus Berry Sherbet Recipe

Ingredients:

  • 3 teaspoons unflavored gelatin
  • 1-1/2 cups cold orange juice
  • 1/3 cup sugar
  • 3 tablespoons lemon juice
  • 1 tablespoon grated lemon peel
  • 1-1/2 pounds fresh or frozen strawberries
  • 3/4 cup unsweetened applesauce

Directions:

  1. In a small saucepan, sprinkle gelatin over orange juice; let stand for 1 minute.
  2. Stir in the sugar, lemon juice and peel.
  3. Cook over low heat, stirring until gelatin and sugar are completely dissolved.
  4. Remove from the heat; cool for 10 minutes.
  5. Place the strawberries and applesauce in a blender.
  6. Add gelatin mixture; cover and process until smooth.
  7. Pour into a shallow freezer container.
  8. Cover and freeze for 1 to 1-1/2 hours or until partially set.
  9. Transfer to a large mixing bowl; beat on medium speed for 2 minutes.
  10. Return to the freezer container; freeze 2-3 hours longer or until firm.
  11. Remove from the freezer 10 minutes before serving.

Sugar Free Recipe: Banana Pudding

Here is a delicious sugar free and low fat banana pudding recipe.

Ingredients:

  • 1 (1 1/2 ounce) box sugar-free instant vanilla pudding mix
  • 3 cups nonfat milk
  • 3 large bananas, sliced
  • 4 ounces sugar-free vanilla wafers

Directions:

  1. Prepare pudding following instant pudding directions.
  2. Line glass bowl or casserole dish with waffers and banana slices.
  3. Pour half of the pudding into the dish.
  4. Layer waffers.
  5. Layer banana slices.
  6. Repeat.
  7. Crumble waffer crumbs and add to top.
  8. Chill and serve.

Low Fat Recipe: Apple Orange Oat Bran Muffins

I’m a huge bran muffin fan, and I have to admit I was excited to find a good recipe for a low fat muffin.  Here is a recipe for low fat apple and orange oat bran muffins.

Ingredients:

  • 1 1/2 cups oat bran
  • 1/2 cup whole wheat flour
  • 1/4 cup packed brown sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 egg
  • 1 tablespoon grated orange rind
  • 2 tablespoons orange juice
  • 1 peeled and diced apple
  • 1 cup raisin

Directions:

  1. In large bowl, combine flour, sugar, oat bran, baking powder and soda, salt and cinnamon.
  2. Combine buttermilk, egg, orange rind and juice in a separate bowl.
  3. Stir wet ingredients into dry ingredients, mixing just until moistened.
  4. Stir in apples and raisins.
  5. Spoon into greased muffin tins.
  6. Sprinkle with wheat germ.
  7. Bake at 400 for 18-20 minutes.

Low Fat Recipe: Strawberry Orange Smoothies

Low Fat Strawberry Orange Smoothies Recipe

Ingredients:

  • 3 cups orange juice
  • 1 carton (8 ounces) strawberry yogurt
  • 6 fresh strawberries
  • 1 can (8 ounces) crushed pineapple, drained
  • 1 medium firm banana, cut into chunks

Directions:

  1. Place half of each ingredient in a blender; cover and process until blended.
  2. Pour into chilled glasses.
  3. Repeat with remaining ingredients.
  4. Serve immediately.

Low Fat Recipe: Vanilla Ice Cream

Looking for low fat ice cream?   I’ve always been a big fan of homemade ice cream, but low fat ice cream is even better!

Low Fat Vanilla Ice Cream Recipe

Ingredients:

  • 3/4 cup sugar
  • 3 tablespoons cornstarch
  • 1/8 teaspoon salt
  • 4 cups fat-free half-and-half
  • 2 egg yolks, beaten
  • 3 teaspoons vanilla extract

Directions:

  1. In a large saucepan, combine the sugar, cornstarch and salt.
  2. Gradually add half-and-half; stir until smooth.
  3. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened.
  4. Remove from the heat; cool slightly.
  5. Whisk a small amount of hot mixture into egg yolks.
  6. Return all to the pan, whisking constantly.
  7. Cook and stir over medium heat for 2-3 minutes or until mixture reaches 160° and coats the back of a metal spoon.
  8. Remove from the heat.
  9. Stir in vanilla.
  10. Cool quickly by placing pan in a bowl of ice water; stir for 2 minutes.
  11. Transfer to a bowl.
  12. Press plastic wrap onto surface of custard.
  13. Refrigerate for several hours (or overnight).
  14. Fill cylinder of ice cream maker two-thirds full; freeze according to manufacturer’s directions.
  15. Refrigerate remaining mixture until ready to freeze.
  16. Allow to ripen in ice cream freezer or firm up in the refrigerator freezer for 2-4 hours before serving.

Low Fat Recipe: Banana Bars

Banana bars have always been one of my favorite recipes, but they aren’t always available for people on low fat diets.   Here is a low fat recipe for banana bars that can fill that void.

Low Fat Banana Bars Recipe

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 1 mashed banana (ripe)
  • 1/2 cup milk
  • 1 egg

Directions:

  1. Preheat oven to 350 degrees and grease an 8 inch pan.
  2. Mix dry ingredients.
  3. Add milk and banana; beat for two minutes or until well mixed.
  4. Add egg and beat for 30 seconds.
  5. Bake for 30 minutes.
